A recipe and technology for the production of fortified biscuits have been developed consumers with a predisposition to disruption folate cycle based on gene polymorphism rs1801133 MTHFR 677C> T, rs1805087 MTR 2756A> G, rs1801394 MTRR 66A> G. Enrichment product active forms vitamins B6, B9, B12 (pyridoxine, methylfolate, methylcobalamin) made it possible increase biological value product. As result research, enriched increased value, were developed. It has proven that are practically not destroyed during baking under influence high temperatures. The loss was 33.6% pyridoxine, 50% methylfolate 86.7% methylcobalamin. These losses can be considered acceptable dosage in cookie adjusted according them. Due presence B cookies, this recommended use by people who violation cycle.
